Almond flour pancakes have become a breakfast favorite among health enthusiasts and those following a low-carb or keto lifestyle. Traditional pancakes, while delicious, are often loaded with carbs that can leave you feeling sluggish. Enter almond flour: a nutrient-dense, low-carb alternative to regular flour. It's derived from whole almonds and retains many of the beneficial nutrients including fiber, protein, and healthy fats. These pancakes not only offer a healthier twist on a classic breakfast dish but also deliver a subtly nutty flavor, making them a delightful morning treat. Whether you're on a keto journey or just looking to reduce carbs, these pancakes are a must-try!

Approximate Nutritional Info: 23g fat, 6g net carbs, 12g protein

Ingredients

  • 1 cup almond flour (approx. 112g or 4 oz.)

  • 3 large eggs (approx. 150g or 5.3 oz.)

  • 1/4 cup unsweetened almond milk (approx. 60ml)

  • 1 tsp baking powder (approx. 5g or 0.2 oz.)

  • 1 tsp vanilla extract (approx. 5g or 0.2 oz.)

  • Pinch of salt

  • Butter or coconut oil for frying

Directions

  • Mix all ingredients in a bowl until smooth.

  • Heat butter or coconut oil in a skillet over medium heat.

  • Pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden brown.

Notes

  • Consistency is Key: Almond flour can vary in texture. If your batter seems too thick, add a splash more almond milk until it reaches a pourable consistency.

  • Golden Brown Perfection: Keep the heat on medium to ensure your pancakes cook evenly without burning. Almond flour can brown quickly!

  • Flavor Boost: For an extra hint of sweetness, add a touch of keto-friendly sweetener like stevia or erythritol to the batter.

  • Toppings Galore: Top with fresh berries, a dollop of Greek yogurt, or a drizzle of sugar-free maple syrup for a delightful finish.

  • Storage Solutions: Made too many? No worries! These pancakes freeze well. Just layer them between parchment paper in a freezer-safe bag. Reheat in a toaster or oven when you're ready to enjoy.

Remember, cooking is as much about experimenting as following the recipe. Feel free to adjust to your taste and have fun in the kitchen!
