Ingredients

  • 1 lb (450g) beef strips

  • 2 tbsp (30ml) olive oil

  • 1 onion, finely chopped

  • 2 cups (150g) mushrooms, sliced

  • 1 cup (240ml) beef broth

  • 1 cup (240ml) sour cream

  • 2 tbsp (30ml) Worcestershire sauce

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

Directions

  • In a skillet, heat olive oil and brown beef strips. Remove and set aside.

  • In the same skillet, sauté onions and mushrooms until tender.

  • Add beef broth and Worcestershire sauce. Bring to a simmer.

  • Return beef strips to the skillet and cook for another 10 minutes.

  • Stir in sour cream and season with salt and pepper.

  • Garnish with fresh parsley and serve.

Notes

  • Choose the Right Cut: Opt for cuts like sirloin or tenderloin for tender results. If budget-friendly is your aim, chuck or stew meat works, but consider slow-cooking for optimal tenderness.

  • Sear the Beef: For a rich flavor, ensure you sear the beef pieces until they have a nice brown crust. This process, known as the Maillard reaction, enhances the dish's depth of flavor.

  • Low and Slow: When simmering the sauce, keep the heat low. This allows flavors to meld without the risk of the cream curdling.

  • Fresh Herbs: Fresh herbs like parsley or dill can elevate the dish. Add them towards the end to retain their vibrant color and taste.

  • Alternative Thickeners: Traditional stroganoff uses flour to thicken the sauce. For a keto version, consider xanthan gum or a touch of cream cheese to achieve the desired consistency without the carbs.

  • Taste as You Go: Always taste and adjust seasonings as needed. Everyone's palate is different, and this ensures your stroganoff hits the mark for you.

  • Serve with Keto Sides: Consider keto-friendly sides like zucchini noodles, cauliflower rice, or steamed green beans to keep the entire meal low-carb.

Remember, cooking is as much an art as it is a science. Trust your instincts, and don't be afraid to experiment a little. Happy cooking and enjoy your Keto Beef Stroganoff journey! 🍲🥄
