Ingredients

  • 4 cups broccoli florets (approx. 400g or 14 oz.)

  • 2 cups chicken or vegetable broth

  • 1 cup cheddar cheese, grated (approx. 100g or 3.5 oz.)

  • 1/2 cup heavy cream (approx. 120ml)

  • Salt and pepper to taste

Directions

  • In a pot, bring the broth to a boil.

  • Add broccoli and cook until tender.

  • Reduce heat, add heavy cream and cheese. Stir until cheese is melted.

  • Season with salt and pepper and serve.

Notes

  • Fresh is Best: Always opt for fresh broccoli over frozen. Fresh broccoli retains its vibrant green color and offers a crisper texture, enhancing the soup's overall taste and appearance.

  • Cheese Choices: While cheddar is a classic, feel free to experiment with other cheeses like Gouda or Monterey Jack for a unique flavor twist.

  • Consistency Matters: For a smoother soup, consider using an immersion blender. If you prefer a chunkier texture, simply mash the broccoli with a potato masher.

  • Avoid Overcooking: Overcooking broccoli can lead to a loss of its vibrant color and essential nutrients. Cook just until it's tender to retain its nutritional value and appealing hue.

  • Seasoning Secrets: A pinch of nutmeg or a splash of white wine can elevate the flavor profile of your soup. Remember to season in stages and taste as you go.

  • Storage Solutions: This soup stores well in the refrigerator for up to 3 days. If planning to freeze, avoid adding the cheese until you're ready to reheat and serve.

  • Creamy without Cream: For a lighter version, substitute heavy cream with milk or a dairy-free alternative. The cheese will still give it a creamy texture.
