Ingredients

  • 1 cup heavy cream (approx. 240ml)

  • 100g dark chocolate (70% cocoa, approx. 3.5 oz.)

  • 3 tbsp erythritol (approx. 36g or 1.3 oz.)

  • 1 tsp vanilla extract (approx. 5g or 0.2 oz.)

Directions

  • Melt the chocolate in a microwave or double boiler.

  • In a bowl, whip the heavy cream with erythritol and vanilla until stiff peaks form.

  • Gently fold in the melted chocolate until combined.

  • Divide into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • Quality Matters: Opt for high-quality dark chocolate with at least 70% cocoa. It ensures a richer flavor and better texture.

  • Whipping Cream: Ensure your heavy cream is cold before whipping. It helps achieve those perfect stiff peaks.

  • Gentle Folding: When combining the chocolate with the whipped cream, fold gently to maintain the mousse's airy texture.

  • Chill Well: For the best consistency, allow the mousse to chill for the full 2 hours, or even overnight.

  • Serving Suggestions: Garnish with a few berries or a sprinkle of cocoa powder for added flair.

  • Storage: If you're not serving immediately, cover with cling film to prevent a skin from forming on the mousse.

  • Keto Sweeteners: Erythritol is a popular choice, but other keto-friendly sweeteners like stevia or monk fruit can also be used. Adjust to taste.
