Ingredients

  • 2 steaks (200g each), preferably ribeye or sirloin for best flavor

  • 2 tbsp unsalted butter (30g)

  • 3 garlic cloves, finely minced

  • Coarse sea salt and freshly cracked black pepper, to taste

  • 2 fresh rosemary sprigs

Directions

  • Preparation: Allow steaks to sit at room temperature for about 10 minutes before cooking.

  • Seasoning: Pat the steaks dry using paper towels. This ensures a good sear. Generously season both sides with coarse sea salt and freshly cracked black pepper.

  • Cooking: Heat a skillet or cast-iron pan over medium-high heat. Once hot, add the butter. Allow the butter to melt and foam slightly.

  • Garlic Infusion: Add the finely minced garlic to the pan. Sauté for about 1 minute, or until fragrant, ensuring the garlic doesn't burn.

  • Searing the Steak: Place the steaks in the pan with the garlic. Cook for about 4-5 minutes on one side, then flip and cook for another 3-4 minutes for medium-rare. Adjust the cooking time based on your preferred doneness.

  • Rosemary Aroma: In the last 2 minutes of cooking, add the rosemary sprigs to the pan. Press them down with a spatula to release their aromatic oils.

  • Resting: Once cooked to your liking, transfer the steaks to a plate and let them rest for about 5 minutes. This allows the juices to redistribute.

  • Serving: Place the steaks on serving plates. Drizzle a bit of the garlic-infused butter from the pan over the top. Garnish with the cooked rosemary sprigs. Serve immediately and savor every bite!

Notes

  • Choosing the Right Cut: For a tender result, opt for ribeye, sirloin, or filet mignon. These cuts are flavorful and perfect for pan-searing.

  • Room Temperature is Key: Allow the steak to sit at room temperature for about 20-30 minutes before cooking. This ensures even cooking and a juicier steak.

  • Butter Browning: Be watchful when melting butter. It can go from golden to burnt in a flash. If you're worried about burning, consider using ghee (clarified butter) which has a higher smoke point.

  • Garlic Timing: Add garlic after the butter has melted to prevent it from burning. Burnt garlic can impart a bitter taste.

  • Resting is Essential: After cooking, let the steak rest for 5-7 minutes. This allows the juices to redistribute, ensuring a moist bite every time.

  • Dietary Tweaks:

    • Paleo: Replace regular butter with grass-fed butter or ghee.

    • Dairy-Free: Use olive oil or avocado oil instead of butter.

    • Whole30: Opt for ghee instead of regular butter and ensure all other ingredients comply with Whole30 guidelines.

  • Herb Variations: While rosemary is classic, feel free to experiment with thyme, oregano, or a mix of your favorite herbs for a unique flavor twist.

  • Searing Secrets: For that perfect crust, ensure your pan is hot before adding the steak. You should hear a sizzle as the steak touches the pan.

  • Thermometer Tip: If you're unsure about doneness, use a meat thermometer. Medium-rare is typically around 135°F (57°C), while medium is about 145°F (63°C).

  • Wine Pairing: For those not strictly adhering to keto, a glass of red wine, especially Cabernet Sauvignon or Merlot, complements this dish beautifully.

Remember, cooking is as much an art as it is a science. Trust your instincts, and don't be afraid to make the recipe your own. Happy cooking! 🥩🍴
