Ingredients

  • 200g of spaghetti

  • 4 garlic cloves, thinly sliced

  • 1/4 cup of extra virgin olive oil

  • 1/4 teaspoon of red pepper flakes (optional, for a spicy kick)

  • Salt, to taste

  • Fresh parsley, finely chopped (for garnish)

  • Grated Parmesan cheese (optional, for serving)

Directions

  1. Cook the Spaghetti:

    • Fill a large pot with water, add a generous amount of salt, and bring it to a boil.

    • Once boiling, add the spaghetti and cook according to the package instructions until al dente.

    • Reserve about 1/2 cup of pasta water, then drain the spaghetti and set aside.

  2. Prepare the Aglio e Olio Sauce:

    • While the spaghetti is cooking, heat the olive oil in a large pan over medium-low heat.

    • Add the sliced garlic and red pepper flakes (if using) to the oil.

    • Sauté the garlic, stirring frequently, until it becomes golden brown but not burnt (about 1-2 minutes).

  3. Combine and Serve:

    • Add the cooked spaghetti to the pan with the garlic oil, tossing to coat the pasta well. If the mixture seems dry, add a little of the reserved pasta water to loosen things up.

    • Season with salt to taste.

    • Transfer the spaghetti to serving dishes, garnish with fresh parsley, and optionally, sprinkle with grated Parmesan cheese before serving.
